Caprese Salad is a popular summertime treat due to the seasonal bounty of tomatoes and basil. Everyone makes it just a little different, but 3 ingredients always remain the same. Tomatoes, basil, and fresh mozzarella. I made this simple treat to go with some roasted chicken and corn off the cob. We received some pretty large tomatoes last week in our CSA pick-up. These were bigger than you see in the grocery. Each tomato was about a pound. We also received a bunch of basil. Feel free to alter my recipe to your desire.
Caprese Salad (yield 2 servings)
1 large tomato
1 ball fresh mozzarella
1 bunch of basil
3 tablespoon olive oil
1 teaspoon balsamic vinegar
Slice tomato to desired thickness (I set aside the ends and only used the middle slices). Slice mozzarella to desired thickness. Layer tomato, basil, mozzarella, tomato, basil, mozzarella, and top with basil. Whisk together olive oil and balsamic vinegar and drizzle 2 teaspoons over each salad.
