Cinnamon and Honey
Honey is the only food on the planet that will not spoil or rot. It will do what some call turning to sugar. In reality honey is always honey. However, when left in a cool dark place for a long time it will do what I rather call “crystallizing”. When this happens I loosen the lid, boil some water, and sit the honey container in the hot water, turn off the heat and let it liquefy. It is then as good as it ever was. Never boil honey or put it in a microwave. To do so will kill the enzymes in the honey.

Honey is a natural anti-inflammatory, so some of the benefits listed above were no surprise to me. My chiropractor tried for years to get me to use local raw honey for allergies. My problem was I’d take it for a day or two, forget for a day or two, take it again for a day or two, forget again, then just stop.
This time around, I was more purposeful about it and kept the honey on the counter where I knew I’d see it when I was fixing breakfast in the morning. I also was near the end of my bottle of generic Zyrtec, so I knew it was time to do or stay on meds. I started well enough in advance that I figured the honey would have time to work before I ran out. Sure enough, after going med-free with just the honey, I couldn’t tell a difference. Last week I forgot to take the honey for a couple of days and still didn’t feel any different. Another coup. I could never do that with allergy meds. If I didn’t take it daily, I could tell pretty immediately. Itchy like crazy from head to toe. It was a major coup for me since I battled with horrible allergies after moving to Kentucky. Turns out I’m allergic to the whole darned state.
Cinnamon has always been my favorite spice. I love the smell and the taste of it. Recipe calls for 1/4 teaspoon of cinnamon? Pffft. Give me 2 teaspoons! I admit, I am heavy-handed on cinnamon and if I’m making something like apple pie, I’m heavy-handed on the ginger, nutmeg, cloves, and allspice, too. Can you blame me? It’s good stuff!
Not sold yet? How about this concoction I threw together a few weeks ago when I wanted something a little sweet. A simple little bowl of a sliced banana, crushed walnuts, and a drizzle of honey.
Hmmm…I could add a bit of cinnamon to that next time….
